Make it Monday--Pinteresting Chili Recipe

I am a big fan of crock pot recipes--especially on those busy afternoons where lessons or sports keep us on the run until dinner time.  We really TRY to eat together as a family every weeknight, which sometimes requires stretching every last strategic and problem solving skill in my brain.  This is where the crock pot is mighty handy.  So today, I'm going to share one of the biggest hits of my recent attempts at pinteresting recipes.

Slow cooker cream cheese chicken chili
1 can black beans
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 8 oz package light cream cheese
2 chicken breasts

Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

Let me tell you--my family is not generally impressed with soups or stews.  Especially my big appetite boys.  But, this was a winner all the way around.  I even used my usual soy cream cheese--and they all raved.  My middle child even compared it to the tortilla soup he'd bummed off his grandfather while eating out with them over Christmas in California.  And, that night he called that soup "a little bit of heaven!" 

Yep, this one is going in the regular rotation.  Give it a try--you'll be glad you did!
