Make it Monday: Easy Breezy Pumpkin Muffins

This last weekend we had a delightful cold snap here in Big D.  I even got to break out my favorite fleece pullover to lounge around in.  And my favorite bargain boots for church on Sunday.  The chill in the air made me feel that I couldn't shake the craving for a Starbucks pumpkin spice latte.  But, we're working hard around here to swear off excess expenses...AND, I heard Starbucks has a shortage of their pumpkin spice syrup.  Yep.  A true dilemma for us who are spoiled rotten by expensive and convenient indulgences.

So, it all had me thinking that today I should share with you a ridiculously easy recipe for pumpkin muffins that I found on Pinterest.  It's so easy I am almost too embarrassed to call it a "make it Monday" project.  Almost.  I mean, it practically makes itself.  And, it's much cheaper than a Pumpkin Spice Latte--you can even win friends and influence people by making it as a dish you serve to a crowd.

Which, in fact, I did.  For our first session of the Priscilla Shirer's One in a Million Bible study, this is what I served my wild womenFrom the silence that followed my breakfast offering, I think it was a success.  

So, here you go.  The big ingredients. 


Yes, bloggy friends.  That is it.  Yellow cake mix and a can of pumpkin.  A grand total of about $3.  If you want to get REALLY creative, you can throw in a dash of cinnamon and/or nutmeg like I did when I mixed it up.

Brace yourself.  Here are the oh-so-complicated instructions.  

Mix it up together.  Until smooth.  Then, pour into cupcake liners in a muffin tin.  Bake at 350 for 20-25 minutes.  The Pinterest source said it was low in weight watchers points, so I'll take their word for it.  

Ta-da.  That's my kind of cooking.  Easy breezy lemon squeezy.  And cheap, cheap, cheap.  Amaze your family.  Leave your friends in awe.  It's up to you if you want to reveal your secret on how easy it was.  But, if you want to throw some flour on your forehead and look exhausted when you serve them, your secret will be safe with me.
